Did you smell something wonderful in the air on Sunday night? It might have wafted over from our driveway…
Ryan surprised me by driving our pick-up truck to his parents’ house and borrowing their grill for the night. When I pulled into the driveway from an out-of-town weekend, I saw the grill, steaming and smoking, on the back of the truck. The air smelled divine. I hopped up onto the bed and opened the lid to see one of our beloved chickens all spiced up with salt, pepper, and a texan rub sittin’ on a beer can. That is a surprising sight. The foil packets were full of diced potatoes – tossed in olive oil, salt, pepper, and rosemary – browning and crisping perfectly. I’ve gotta tell you: beer can chicken is the best, most moist, flavorful roast chicken I have ever had. It was divine. In fact, if I were trying out for this season’s Master Chef, I would walk into that audition with a free-range chicken in one hand and a can of beer in the other. And I would win. You would, too.
